Summary


A few weeks ago I waxed poetic about portable savory pies. Not all savory pies, however, lend themselves to portability. Chicken pot pie is one of those and has been a favorite meal since I was a child.

My mother didn't make pot pie from scratch; she benefited from the convenience of tossing foil tins into the oven so she could focus on the many other tasks that accompany three children and a job. My brothers and I waited impatiently for the pies to turn golden brown in the oven (microwave pies had yet to be invented). I loved the flaky, crisp crust that enclosed the comforting filling that, if you were not patient, would blister the roof of your mouth. I was not patient. But I craved the pies anyway - the ones with both a top and bottom crust were the best.
