Sometimes I wonder where the sayings "easy as pie" and "it's a piece of cake" originated.

Both can be downright difficult: crusts can tear or get tough and shrink; cakes can be dense and heavy. There are, however, some pies and cakes that are both simple to make and taste scrumptious. Coconut cream pie is one of my favorites because it's easy and tasty.
